Description
Derrumbes Guerrero is a mezcal produced by the skilled vinatero (master distiller) Israel Ríos Bucio in Coyuca de Catalán, Guerrero. It is crafted using wild maguey Penca Ancha, also known as Agave cupreata. The production process involves cooking the agaves in an underground pit oven, milling them with a mechanical shredder, fermenting them in open-air plastic barrels, and double distilling them in a unique still. This still is made from a hollowed-out trunk of a higuera blanca tree, which sits over a copper pot.
